Race is flavor only, changing some parts of the story and dialogues. Most racial skills are useless, and this is by design. Some racial skills are useful at endgame, because the good skills were nerfed, but it should change soon. You can create a good thief with any race you want, so no worries. Have fun :D.

There's almost 0 chances for new classes, since they release new elite specializations now. Some make professions feel like a completely new class, but that's the closest it'll get.
